This granola is so good. I “cooked” it in my dehydrator at 115 degrees so technically it is still raw. You could cook it at a low temp in your oven if you like. It is completely grain free. Just nuts, seeds, dates, coconut, maca, lacuma, cinnamon and vanilla. I think it would even work pressed into bars with some dried berries but that is a recipe for another day.
It makes a great topping for chia seed pudding, banana nice cream, or plant based yogurt. Of course you could eat at a cereal as well.
You will need a blender and a food processor. As I said above I used a dehydrator to dry out my granola but you could bake it at a low temp in your oven if you wish. You will grind all the nuts and coconut in the food processor. The nuts should be broken down into smaller pieces but not turned into a powder. It is ok if it has some larger pieces in it. Keep the sunflower seeds whole.
The first step is to soak your dates. While they are soaking you can work on processing the nuts and coconuts. The first picture below is how the mixed granola will look like before you put onto dehydrator trays or a baking sheet to dry.
24 medjool dates soaked in 2.5 cups of warm water for at least 30 minutes
pit dates and put into blender with 2 cups of soaking liquid with 2 tbsps of maca, lacuma powder and cinnamon, 1 tsp of vanilla.
2 cups walnut
2 cups hazelnuts
1 cup almonds
1 cup pecans
4 cups shredded coconut
1/2 cup chia seeds
1 cup sunflower seeds
Just mixed and ready to go onto trays or baking sheet.
Finished dehydrating in about 12 hours or so.
Put into an air tight container to store.
